TRUITES AU CHAMPAGNE

INGREDIENTS

- 6 truites de 180 à 200g
- 2 échalotes
- 1 cuillerée à soupe de concentré de tomate
- 3 brins de persil
- 1/2 bouteille de champagne nature
- 100g de beurre
- 2 oeufs
- 1 citron
- 1 feuille de laurier
- 1 cuillerée à café de fécule
- sel, poivre

PREPARATION

Faites vider les truites par les ouïes pour les conserver intactes.
Dans un plat allant au four garni des échalotes émincées, du persil, du laurier, disposez les truites sans qu'elles se chevauchent, mouillez avec le champagne qui doit baigner les truites.
Salez, poivrez.
Couvrez d'une feuille d'aluminium, mettez au four moyen (5 au thermostat) chauffé 15 minutes d'avance.
Laissez cuire 15 à 20 minutes, juste le temps nécessaire pour enlever la peau des truites encore fermes (pas cuites).
Réservez les truites dans le plat de service couvert et maintenu au chaud sur une casserole d'eau bouillante.
Remettez les peaux dans la cuisson, faites cuire à gros bouillons pendant 5 minutes, passez au chinois.
Ajoutez le concentré de tomate, faites chauffer, ajoutez la fécule délayée dans un peu d'eau, amenez à ébullition.
Hors du feu, ajoutez par fractions le beurre ramolli, fouettez pour le faire fondre.
Ajoutez ensuite les jaunes des mufs délayés avec le jus de la moitié du citron.
Rectifiez l'assaisonnement, versez sur les truites, couvrez d'une feuille d'aluminium.
Mettez au four doux pour terminer la cuisson sans bouillir 10 à 12 minutes.
