INGREDIENTS
- 2 kg de tripes
- 1 pied de bœuf + 1 pied de veau coupés en 4
- 6 grosses carottes
- 2 oignons piqués d’un clou de girofle
- 1 rouleau de couennes
- 2 blancs de poireaux
- 3 branches de céleris
- 1 grosse gousse d’ail
- 2 cuillères de gros sel
- poivre
- 1 bouquet garni
- 2 cuillères à soupe de calvados
- 1 litre de cidre brut
PREPARATION
Lavez soigneusement les tripes et les mettre à cuire à la vapeur dans la cocotte-minute 5 min.
Rincez les tripes à l’eau froide, les égoutter et les couper en gros morceaux (5cmx5cm).
Disposez dans la cocotte en alternant les tripes, les couennes, les pieds, les légumes émincés et le bouquet garni. Versez le cidre et le calvados.
Laissez cuire dans la cocotte environ 1h20 à partir du moment ou la soupape « chuchote ».
Cette préparation se sert chaude, voire brûlante, une fois les os et le bouquet garnis enlevés.
