TARTE AUX OIGNONS

INGREDIENTS

- une tôle de 24 cm de diam.
- 1 paquet de pâte feuilletée surgelée ou de pâte brisée
- 500g d'oignons moyens
- 1/2 litre de lait
- 2 cuillerées à soupe de farine
- 3 jaunes d'oeufs
- 40g de beurre
- 1 oeuf pour dorer
- sel, poivre, muscade

PREPARATION

Etendez la pâte sur 4 mm d'épaisseur, garnissez la tôle beurrée sans tendre la pâte sur les bords. Coupez ce qui dépasse au rouleau, piquez le fond à la fourchette. Dorez le bord à l'oeuf battu, laissez en attente. Emincez les oignons, ne les hachez pas. Faites-les fondre dans le beurre à très petit feu pour qu'ils soient cuits lorsqu'ils commencent à blondir.

Saupoudrez avec les cuillerées de farine, un peu bombées, tournez jusqu'à ce que la farine soit entièrement amalgamée aux oignons sans grumeaux. Mouillez d'un seul coup avec les 3/4 du lait froid, amenez à ébullition en remuant toujours. Ajoutez du lait pour obtenir une bouillie un peu épaisse. Ajoutez les jaunes d'oeufs un par un en mélangeant chaque fois à fond.

Salez, poivrez, muscadez. Redorez le bord de la pâte, mettez le reste de l'ceuf dans les oignons, versez dans la pâte. Mettez au four chaud 220° (6 au thermostat), laissez cuire 20 minutes sans ouvrir le four, puis surveillez la couleur jusqu'à la fin de la cuisson. Soulevez le bord de la tarte délicatement. Le fond doit être rigide, non mou.

En cuisant, la garniture de la pâte va gonfler, mais elle retombera aussitôt sortie du four. Servez tiède.
