- 1/2 citron
- 1 cs de vinaigre de melfort
- 1 cs de beurre
- canelle
- cassonade
- 1/4 L vin rouge
- 1 étoile d'anis
- 1 échalotte
- sel
- 1 pincée de gingembre
- pétales de rose

PREPARATION

- Presser l'orange et le citron
- Mettre dans une casserole le jus, le vin, le sucre, l’anis étoilé, et la cannelle
- Porter à ébullition
- Laisser réduire de moitié
- Filtrer
- Faire fondre 1 cs de beurre dans une poêle
- Saler
- Ajouter le gingembre
- Ajouter 1 cc du vin chaud
- Faire revenir les saint jacques
- Ajouter le vinaigre
- Puis le vin chaud
- Faite cuire encore 5 min
- Dresser les saint jacques dans les assiètes sur les pétales de roses
- Décorer avec un filet de sauce
