GALETTES BRETONNES

INGREDIENTS

Pour 24 galettes

- 250g de farine
- 150g de sucre en poudre
- 1/2 sachet de levure chimique
- 1 oeuf complet + 3 jaunes
- 150g de beurre demi-sel

PREPARATION

Mélanger la farine et la levure. Ajouter le sucre. Creuser un puits en mettant un oeuf et 2 jaunes au milieu, puis amalgamer peu à peu en incorporant le beurre ramolli coupé en morceaux.

Rouler en boule et laisser reposer environ 1 heure minimum, sous un torchon.

1 heure plus tard, recouvrir la tôle à pâtisserie d’une feuille de papier sulfurisé ou la fariner légèrement.

Fariner légèrement mais suffisamment le plan de travail, étaler la pâte au rouleau sur au moins 2,5 mm d’épaisseur.

À l’aide d’un emporte-pièce (un verre par exemple) de 7 cm de diamètre environ découper la pâte en petits disques en faisant le moins de chutes possibles. Récupérer les chutes, les amalgamer et abaisser de nouveau la pâte pour la découper.

Préchauffer le four à 160° (Th 5), environ.

Avec les dents d’une fourchette, dessiner des croisillons perpendiculaires sur les galettes.

Les disposer sur la tôle à pâtisserie, environ 12 par fournée, puis les badigeonner avec le dernier jaune d’oeuf à l’aide d’un pinceau.

Mettre au four 15 minutes environ la première fournée de galettes, puis à l’issue de la cuisson, sortir la tôle du four, décoller les galettes et les laisser refroidir sur une grille.

Procéder de la même manière pour la deuxième fournée.

J'ai plusieurs fois suivi cette recette qui m'a chaque fois valu de nombreux compliments de la part des gourmand(e)s de mon entourage. A noter que j'ai fini par ne pas laisser reposer la pâte comme indiqué, sans que cela change quoi que ce soit au résultat final... Très simple et vraiment délicieux !!!
