INGREDIENTS

- 1 foie gras
- 2 cs de sauterne ou de beaumes de Venise
- sel
- poivre

Pour le pâton
- farine
- eau

PREPARATION

- Sortir le foie et le laisser se réchauffer à température ambiante 1h
- Séparer les deux lobes
- Tirer délicatement sur les nerfs qui relient les deux lobes
- Si le foie est assez chaud, les nerfs s'enlèveront facilement
- Entailler avec un couteau pointu
- Saupoudrer le foie de poivre, de sel (ne pas hésiter sur le sel) le plus uniformément possible
- Déposer le foie dans un plat
- Le badigeonner avec le sauterne et verser le reste dessus
- Laisser macérer 24h
- Mettre le foie (sans le jus) dans une terrine
- Bien tasser
- Recouvrir le terrine avec un couvercle
- Faire une pâte avec de l'eau et de la farine
- L'étirer en un long tube (pâton)
- Sceller le couvercle de la terrine avec ce paton en laissant une petite ouverture
- Faire cuire au four au bain marie à 180°c (th6) 20 min

Touche personnelle: oser les associations
- Avec le sel et le poivre ajouter de la canelle
- Intercaler au milieu du foie gras des lamelles de figues ou de pommes, de truffes...
