BUCHES AU CHOCOLAT

TEMPS

INGREDIENTS

Variante 1 : rectette simple
- 4 oeufs
- 225 g de sucre
- 150 g de farine
- 1 cc de levure chimique
- 1 pincée de sel
- 150 g de chocolat noir
- 10 g de beurre

Variante 2 : recette traditionnelle
- 7 oeufs
- 150 g de sucre en poudre
- 50 g de farine
- 1 pincée de sel
- 60 g de beurre
- 100 g de chocolat noir
- 1 feuille de gélatine
- 3 cs d'eau
- 260 g de crème fraîche liquide pour chantilly
- 20 g de cacao

Variante 3 : excellente recette, avec une crème au beurre
- 3 oeufs + 1 jaune
- 160 g de sucre
- 30 g de farine
- 80 g de maïzena
- 100g de chocolat noir
- 60 g de sucre
- 1/4 L de lait
- 215 g de beurre
- 1/2 sachet de levure
- 1 sachet de sucre vanillé
- 1 pincée de sel
- 2 cs d'eau chaude

PREPARATION

Variante 1 : recette simple

Pour le biscuit à rouler :
- Préchauffer le four à 210°c (th 7)
- Mélanger la farine, la levure et le sel
- Bien mélanger 3 oeufs et le sucre jusqu'à ce que le mélange blanchisse
- Le mélange devient mousseux
- Ajouter le mélange farine levure sans cesser de remuer en la tamisant pour ne pas avoir de grumeaux
- Utiliser un moule rectangle ou le lèche fritte
- Le recouvrir de papier sulfurisé
- Verser la pâte dans le moule
- Bien étaler
- Enfourner
- Faire cuire 10 min
- Démouler la pâte sur un linge humide
- Puis rouler délicatement avec le linge
- Réserver
Pour le fourage :
- Faire fondre au bain marie le chocolat et le beurre
- Bien mélanger
- Retirer du feu
- Ajouter un jaune d'oeuf
- Bien mélanger
- Dérouler le biscuit
- Tartiner avec le chocolat
- Enrouler à nouveau sans le linge
- Recouvrir la bûche avec le reste de chocolat

Variante 2 : recette traditionnelle

Pour le fourrage :
- Faire fondre le chocolat avec le beurre au bain marie
- Faire tremper dans l'eau froide la feuille de gélatine
- Réserver
- Casser 3 oeufs entiers dans un saladier
- Battre (avec un fouet électrique)
- Dans une casserole mélanger 50 g de sucre et l'eau
- Faire bouillir
- Ajouter la feuille de gélatine
- Bien mélanger
- Le verser dans les oeufs battus
- Mélanger avec le batteur jusqu'à ce que le mélange soit totalement refroidi
- Puis ajouter au mélange le chocolat fondu
- Mélanger à nouveau avec le batteur
- Verser le cacao et continuer à mélanger
- Dans un bol froid monter la crème en chantilly à l'aide du batteur
- La chantilly est prête quand la crème attache au batteur (plus longtemps elle se transformera en beuure)
- Ajouter la crème au mélange précédenr
- Ne plus utiliser le batteur
- Mélanger avec souplesse (comme lorsqu'on incopore des blancs montés en neige) en soulevant par en dessous le mélange
- Réserver
Pour le biscuit roulé :
- Préchauffer le four à 180°c (th 6)
- Uitliser un plat rectangulaire ou le lèche fritte
- Le revourir de papier sulfurisé
- Dans un saladier mettre 2 blancs d'oeufs
- Dans un deuxième saladier mettre les 2 jaunes d'oeufs et les 2 oeufs restants, ajouter 85 g de sucre et battre au mixeur jsuqu'à ce que le mélange blanchisse
- Ajouter petit à petit la farine (en tamisant pour éviter les grumeaux)
- Mélanger délicatement avec une cuillère (comme pour la crème)
- Dans le saladier des blancs d'oeufs, ajouter la pincée de sel
- Monter les balncs en neige
- Puis ajouter 25 g de sucre pour faire une meringue
- Incorporer la meringue au mélange précédent en remuant délicatement avec une cuillère (comme pour la crème)
- Verser la pâte dans le plat
- Faire cuire 10 min
- Démouler sur un torchon humide
- Tartiner avec la crème au chocolat
- Enrouler la bûche
- Utriliser le torchon pour l'enrouler et pour bien former la bûche
- Recouvrir la bûche avec le reste de crème au chocolat

Variante 3 : excellente recette, avec une crème au beurre

Pour le biscuit :
- Préchauffer le four à 150°c (th 5)
- Dans une jatte mettre 3 jaunes d'ouefs, 100 g de sucre et l'eau
- Battre jusqu'à ce que le mélange blanchisse
- Dans un bol, mélanger la farine, 50 g de maïzena et la levure
- Ajouter à la préparation précédente petit à petit sans cesser de mélanger
- Monter en neige 3 balncs d'oeuf avec le sel
- Incorporer délicatement les blancs en neige à la préparation
- Verser le mélanger sur une plaque recouverte de papier sulfurisé
- Faire cuire 8 min
- Recouvrir de sucre une feuille de papier sulfurisé
- Démouler dessus
- Enrouler de suite
- Laisser refroidir
Pour la garniture :
- Couper le chocolat en petits morceaux
- Le mettre dans une casserole avec la moitié du lait
- Faire fondre
- Dans le reste de lait délayer le reste de maïzena
- Ajouter au chocolat
- Bien mélanger
- Faire bouillir 3 secondes
- Retirer du feu et laisser tiédir
- Ajouter le jaune d'oeuf pour lier
- Travailler le beurre en pommade
- L'incorpoer à la crème quand elle est presque froide petit à petit
- Bien mélanger

Idées de décorations :
- des tas d'objets peuvent être faits en pâtes d'amandes, pour avoir les bonnes couleurs utiliser des colorants alimentaires ou du cacao
-> des feuilles et fruits de houx
-> des champignons
-> des lutins...
- plus simplement, avec ou sans pochoir, saupoudrer du sucre glace pour un effet neige
- des petites meringues
- couper une tranche de la bûche et la déposer dessus

J'ai testé la variante "traditionnelle". Au moment d'étendre le fourrage sur le biscuit, celui-ci était encore tout liquide. Il est donc impérative de le mettre d'abord 2-3h au réfrigérateur avant de l'étendre et de rouler la buche. Cela permet à la crème de durcir un peu. Sinon, cette précaution prise, cela donne une bonne buche facile à réaliser.
