- 1 kg d'asperges vertes
- 24 noix de Saint Jacques
- 3 échalottes émincées
- 80 g de beurre doux
- 40 cL de crème fraîche épaisse
- 10 cL de vin blanc
- sel
- fleur de sel
- poivre

PREPARATION

- Trier et couper les asperges en morceaux
- Plonger les asperges dans l'eau bouillante salée
- Réserver quelques pointes d'asperges encore croquantes pour la décoration : les passer sous l'eau froide
- Faire revenir les échalottes émincées dans la moitié du beurre
- Puis ajouter les asperges
- Mouiller avec un peu d'eau
- Laisser mijoter 10 min
- Réserver la préparation
- Ensuite cuire la crème fraîche et le vin blanc
- Saler et poivrer
- Remuer au fouet
- Puis laisser réduire à oetit feu
- Ajouter la préparation
- Cuire 5 min
- Mixer
- Filtrer
- Fouetter
- Faire dorer les saint jacques dans l'autre moitié du beurre
- Saler et poivrer
- Disposer dans les assiètes les saint jacques et les têtes d'asperge
- Ajouter la mousse
- Servir chaud
