INGREDIENTS

- 1 bouquet garni
- 300 g carottes
- 1 celeri
- 4 clous de girofle
- 1 kg gite à la noix
- 3 os moelle
- moutarde, cornichons
- 300 g navets
- 2 oignons
- 500 g plat de cotes
- 4 poireaux
- sel, poivre

PREPARATION

Portez à ébullition dans 4 litres d'eau froide la viande.
Ficelez les poireaux. Epluchez et lavez les legumes.
Piquez l'oignon de 4 clous de girofle. Faites dorer l'autre coupé en deux pour le faire caraméliser.
Plongez tous les legumes, le bouquet garni, et les os à moelle. Assaisonnez. Ajoutez une dizaine de grains de poivre. Couvrz et laissez fremir 3 heures à feu doux.
Disposez les viandes et légumes. Arrosez avec le bouillon. Accompagnez de pommes de terre cuites à l'eau, de sel, de moutarde, et de cornichons.
