PREPARATION
Avec un bon petit couteau, coupez en très petits morceaux les écorces d'orange confites, mélangez-les aux amandes.
Dans une casserole à fond épais, versez le sucre, le miel, la crème fraîche. Mettez sur le feu et faites cuire 3 à 5 minutes en mélangeant à la spatule en bois.
Vérifiez la cuisson en versant une goutte dans un bol d'eau froide. La boule formée doit être molle et malléable. Ajoutez à ce mélange les fruits et la farine. Mélangez. Huilez la plaque du tour avec deux petites cuillères, faites des tas réguliers en les aplatissant légèrement et en les espaçant peu.
Faites cuire 7 à 8 minutes à four moyen 1800 (5 au thermostat). Laissez refroidir, décollez à la spatule.
Pour le glaçage: râpez le chocolat, faites-le fondre au bain- marie, en remuant. A la spatule, étalez un peu de chocolat sur la face plane des florentins, laissez durcir sur une grille.
