PREPARATION
Coupez le poulet en 12 morceaux et le travers de proc désossé en cubes. Mettez-les dans une cocotte avec le tiers de l'huile. Faites-les cuire à moitié à petit feu pendant 30 minutes. Assaisonez.
Dans le plat à paella, mettez le reste d'huile. Chauffez à feu vif, ajoutez les calmars et le poivron coupés en lanières. Quand leur eau est évaporé, ajoutez le riz, les oignons, l'ail haché et les queues de langoustines. Lorsque le riz est laiteux, ajoutez les tomates coupées en 4, épépinées. Faites chauffer jusqu'à ce que les tomates soient crémeuses. Répartissez les morceaux de viandes moitié cuits, ajoutez leur cuisson, les petits pois. Assaisonez. Ajoutez une pointe de cayenne et de safran fondu dans l'eau chaude salée. Amenez à ébullition. Couvrez et baissez le feu. Laissez bouilloner 20 minutes. Au bout de ce temps, le riz aura absorbé tout le liquide. Découvrez. Disposez les moule sur le plat en les enfoncant à moitié. Quand elles seront ouvertes, servez. |
