LES FRIANDS à LA SAUCISSE

TEMPS

>> Cuisson : 30 min / Preparation : 45 min / Repos : 70 min

INGREDIENTS

- 1 gousse ail
- 400 g beurre
- 750 g chair à saucisse
- 25 cl eau
- 500 g farine de blé
- 90 g mie de pain
- 1 pincée noix de muscade, de sel et de poivre
- 1 œuf battu
- 1 oignon haché
- 30 g persil ciselé
- 1 pincée sel

PREPARATION

Mélangez la farine avec le beurre en morceaux (100 g), la pincée de sel et l'eau. Pétrissez. Faites une boule et enveloppez-la d'un film plastique. Mettez-la au réfrigérateur pendant 20 minutes. Pendant ce temps, coupez les 300 g de beurre restants en lamelles.
Etalez la pâte en un rectangle. Placez les lamelles de beurre sur les 2/3 et rabattez la pâte pour la plier en 3. Tournez la pâte d'1/4 de tour; étalez-la et repliez-la de la même manière.
Enveloppez-la dans un film plastique, et remettez-la au réfrigérateur 30 minutes. Donnez lui 2 tours - roulés et pliés - comme précédemment. Laissez reposer au frais 20 minutes.
Préchauffez le four à 180°C (th. 6). Mélangez la chair à saucisse, l'oignon haché, l'ail écrasé, le pain de mie, l'œuf battu, le persil, la pincée de muscade, le sel et le poivre.
Etalez la pâte en un rectangle. Divisez-la en 2 dans la longueur et découpez 6 rectangles. Garnissez chaque friand de chair à saucisse. Collez le rabat avec un œuf battu dans une cuillère d'eau. Badigeonnez les friands. Faites cuire 30 minutes.
