INGREDIENTS

- 400 g beurre demi-sel ramolli
- 20 cl eau tiède
- 400 g farine de blé
- 10 g levure fraîche de boulanger
- 320 g sucre en poudre

PREPARATION

Versez la farine dans un saladier et faites un puits. Dans un bol, délayez la levure avec l'eau tiède. Versez le tout dans le puits. Pétrissez pendant 5 minutes. Laissez reposer pendant 20 minutes. Déposez la pâte sur un plan fariné. Etalez la en un rectangle. Etalez au centre en une couche régulière et épaisse le beurre coupé en morceaux.
Ajoutez le sucre en saupoudrant. Enfoncez le sucre dans le beurre. Pliez la pâte en trois, en ramenant les bords vers le centre, en un rectangle.
Couvrez la pâte d'un linge et laissez reposer 20 minutes. Faites pivoter la pâte d'un quart de tour, étirez-la avec les mains et en l'écrasant. Pliez la encore en 3 et laissez reposer 20 minutes. Recommencez la même opération et laissez reposer 20 minutes. Préchauffez le four à 200°C (th. 6-7). Déposez la pâte dans le moule beurré et fariné. Faites cuire pendant 30-40 minutes. Pendant la cuisson, recueillez l'exédent de beurre et arrosez le gâteau. Refaites cette opération 2 ou 3 fois.
