LE KOUGELHOPF

TEMPS

>> Cuisson : 50 min / Preparation : 30 min / Repos : 2h

INGREDIENTS

1 moule de 20 cm environ
500 g de farine
10 g de sel
75 g de sucre
150 g de beurre
2 oeufs (1 entier + 1 jaune)
250 ml de lait tiède
2 sachets de levure de boulanger
75 g de raisin malaga
50 g environ d'amandes entières
25 g de sucre glace pour le décor.

Tous les ingrédients doivent être à température ambiante.

PREPARATION

ETAPE N°1 Préparation du levain Mélanger la moitié du lait tiède avec les 2 sachets de levure de boulanger + 250 g environ de farine. Laisser reposer 20-30 min dans un endroit tiède (dans le four à 40°c avec 1 verre d'eau)



	ETAPE N°2 La pâte Mélanger avec le reste de farine les 2 oeufs + le sucre + le sel + le reste de lait tiède. Mélanger la pâte avec les mains de manière énergique environ 15 min.



ETAPE N°3 Le kugelhopf Mélanger la pâte, à laquelle on aura rajouté le beurre ramoli, avec le levain qui aura doublé de volume, ce durant 5 min.



	ETAPE N°4 Laissez reposer cette préparation 1h00 dans un endroit tempéré (four à 40°c avec verre d'eau). Disposer dans le fond du moule, préalablement beurré, les amandes entières.



ETAPE N°5 Tapotez la pâte, y incorporer les raisins secs et disposer alors la préparation dans le moule.



	ETAPE N°6 Laissez gonfler la pâte, celle-ci doit affleurer à hauteur du moule.



ETAPE N°7 Faire alors cuire au four 50 min à 210 °c (four préalablement chauffé). Astuces : Si le kugelhopf se colore trop lors de la cuisson, le couvrir avec de l'alu. Si le kugelhopf se démoule mal, mettre le moule à l'envers et le laisser reposer quelques minutes avec un linge humide dessus. Bon appétit !!!
