GLACE VANILLE

>> Cuisson : 15 min / Preparation : 10 min / Repos : 1 nuit

INGREDIENTS

- 1/2L de lait + 1/2L de crème fraiche
- 8 jaunes d'oeufs
- 200 g de sucre
- 2 gousses de vanille

PREPARATION

ETAPE N°1 La glace à la vanille est une crème anglaise glacée. Avec les ingrédients préparer une crème anglaise (voir la recette de la crème anglaise) : Portez à ébullition le lait, la crème fraîche, la moitié du sucre et la vanille coupée en deux. Puis laisser infuser. Dans un autre bol fouetter les jaunes d'oeufs avec l'autre 1/2 de sucre pour faire blanchir le mélange. Verser le lait, petit à petit, sur le mélange sans cesser de remuer. Remettre le tout dans une casserole et faire cuire à feu très doux jsuqu'à ce que le mélange devienne oncteux (vvoir la recette). Puis verser dans un bol pour refroidir le mélange.



	ETAPE N°2 Mettre la crème au frigo 4h pour que le mélange refroidisse bien



ETAPE N°3 Puis mettre dans une sorbetière 15 min ou au congélateur en remuant (voire mixant) le mélange tous les 1/4h pour éviter la formation de cristaux. Puis laisser refroidir la nuit et consommer rapidement. La galce maison ne se conserve pas.
