INGREDIENTS

Pour la pâte:
- 200g de farine
- 100g de beurre
- 30g de sucre semoule
- 1 oeuf, 1 pincée de sel
- 1/4 de verre d'eau

Pour le flan:
- 1/2 litre de lait
- 4 jaunes d'oeufs
- 100g de sucre semoule
- 50g de farine
- 25g de sucre glace
- 1 citron

Pour la meringue:
- 2 blancs d'oeufs
- 75g de sucre semoule
- 25g de sucre glace

PREPARATION

La pâte: Tamisez la farine et faites un puit au centre, mettez-y l'oeuf entier, le sel, le sucre, le beurre coupé en dés et l'eau. Pétrissez avec les doigts et formez une boule de pâte. Étendez-la au rouleau et chemisez-en un moule à tarte beurré. Recouvrez le fond de pâte d'une feuille de papier sulfurisé garnie de haricots secs. Faites cuire 10 minutes à four moyen 180° (5 au thermostat). Otez le papier et les haricots.

Le flan: Dans une casserole travaillez au fouet les 4 jaunes d'oeufs avec le sucre semoule, jusqu'à ce que le mélange blanchisse. Ajoutez la farine tamisée, le zeste de citron râpé et délayez en versant peu à peu le lait bouillant. Mettez sur le feu et, en remuant, faites bouillir 4 à 5 secondes. Hors du feu, ajoutez le jus de citron. Versez cet appareil dans la pâte précuite. La meringue: Battez les blancs en neige en ajoutant progressivement le sucre semoule. Recouvrez le flan de meringue, saupoudrez de sucre glace et passez au four doux 130° (3 au thermostat) pendant 15 minutes.

Notre conseil: pour précuire le fond de pâte, il faut absolument recouvrir le fond de papier sulfurisé et de légumes secs pour empêcher le soulèvement de la pâte à la cuisson.
