INGREDIENTS

250 g de farine
250 g de beurre
250 g de jambon blanc
2,5 kg de poireaux
250 g de crème fraîche
125 g de beurre
25 cl de lait
5 oeufs
30 g de fromage
25 g de beurre.

PREPARATION

Lier le mélange avec un oeuf.

Envelopper la pâte dans un film alimentaire et laisser-la reposer 30 minutes au frigo.

Trier les poireaux. Conserver uniquement le blanc. Les couper en grosses rondelles. Faire revenir les poireaux dans 75 g de beurre à feu doux.

Laisser cuire une heure. Tourner de temps en temps.Pendant ce temps, abaisser la pâte, puis foncer un plat à tarte. Piquer le fond avec une fourchette et remettre au frigo.

Couper le jambon en dés. Le faire dorer dans le reste de beurre.

Mélanger les oeufs, le lait, la crème, le sel et le poivre. Puis verser sur la pâte. Saupoudrer de fromage râpé et garnir de quelques noisettes de beurre.

Cuire à 160° (thermostat 5), 30 minutes.
