- Dans chacune des tranches de saumon couper un rectangle
- Découper et réeserver le "chutes" de saumon fumé - Ecraser la moitié de l'avocat dans un bol - Le mélanger avec un peu de jus de citron pour qu'il ne noircisse pas - Ajouter le fromage blanc - Bien ménager - Réserver 4 brins de ciboulette - Hacher le rest de la ciboulette - Ajouter au mélange du fromage blanc la ciboulette ciselée - Saler et poivrer - Ajouter les chutes de saumon - Bien mélanger - Tartiner de ce mélange les tranches de saumon fumé - Enrouler les tranches sur elles mêmes - Attacher chacune des tranches avec un brin de ciboulette - Avec une petit cuillère prélever dans l'avocat restant des petites boules d'avocat - Les plonger de suite dans le jus de citron (pour qu'elles ne noircissent pas) - Dresser chacune des aasiètes avec un rouleau de saumon et 3 perles d'avocat - Servir |
