PREPARATION
Mettre le lait à bouillir avec sa gousse de vanille fendue en deux ainsi que le sel. Retirer la casserole du feu puis ajouter le sucre en le faisant fondre lentement en remuant.
Mettre le sucre au fond du moule et humecter avec un peu d'eau. Faire chauffer le moule sur le feu et attendre que le mélange prenne une couleur blonde légèrement foncée. Dès qu'il a atteint cette couleur mettre le fond du moule dans l'eau froide. Faites tourner le moule, le caramel doit se répandre sur les parois. À nouveau, mettre les parois du moule en contact avec l'eau froide afin que celui-ci craque.
Mélanger les oeufs en les fouettant avec le lait. Verser dans le moule recouvert de caramel à l'aide d'un chinois.
Mettre le moule au bain-marie (poser le moule dans un plat plus grand contenant de l'eau : thermostat 2 à 3). Le temps de cuisson est de 1 heure.
La cuisson est terminée lorsque que vous enfoncez la lame d'un couteau et qu'elle ressort propre.
À ce moment-là retirer le plat et laissez-le refroidir tout doucement. Afin de faciliter le démoulage aidez-vous d'un couteau et passer le long des bords avant de retourner votre moule lors du service.
