CORAIL DE SAINT JACQUES AU FOIE GRAS

INGREDIENTS

- 25 noix de coquille Saint-Jacques
- 1 petit foie gras frais
- 5 échalotes
- 1 cs de Porto
- 1 L de crème
- 1 carotte
- 1 cs d'huile d'olives
- sucre
- sel
- poivre
- cerfeuil
- thym
- laurier

PREPARATION

- Emincer les échalottes
- Couper en rondelles la carotte
- Faire revenir l'échalotte avec la carotte, le thym, le laurier et l'huile
- Ajouter le corail
- Déglacer avec le porto
- Puis ajouter la crème
- Porter à ébulition
- Retirer le laurier
- Mixer
- Filtrer
- Réserver
- Couper 6 escalopes de foie gras
- Poêler les escalopes dans une poêle très chaude
- Réserver
- Faire revenir les noix de coquilles Saint-Jacques dans la poêle
- Verser la sauce dans les assiètes
- Disposer quelques noix et 1 escalope par assiète
- Saler et poivrer
- Décorer avec le cerfeuil
